While it isn't my main research focus, I find neural development fascinating.
In this article, the authors improve on spherical organoids (which are like miniature model organs) by slicing them apart to increase penetration of oxygen to the interior. Then, they use the sliced organoids as a model to study how a genetic mutation found in psychiatric patients might change the way neurons develop.
